A great fusion ingredient that my wife bought me while on a “girls weekend”. The smell is out of this world – garlic, ginger, soy sauce…and bourbon ! Perfect to try out some shrimp on the Kamado wok.

Toys for the Boys !
No hobby is complete without being able to invest in “the gear” and this hobby is no exception. The gadgets can range from simple, primitive tools that more quickly start a fire (a chimney starter, for example) to complex electronic devices that keep the fire burning (WiFi temperature management systems). They include “man tools” and big, sharp knives that would not look out of place defending you from a zombie attack; and also aprons and gloves to protect your pretty clothes and soft hands from dirt and ash.
This section includes some analysis of my favourite tools (e.g. the Trompo King !) and maybe also some which are just ridiculous, superfluous or pointless (the “jalapeño popper cooker” comes to mind !).
However useful they are in the end, they all have added to that “Amazon delivery” excitement when they arrive – and they’ve all been put to the test in some way or another as part of developing some new technique or in creating a new food masterpiece…which is always where the fun is !

Ginny’s Paella al Disco(“ish”)
This is a dish that my wife, Ginny, can make with her eyes closed. It’s one that’s very popular with everyone in the family and has made it across the pond from the UK to here in the USA…despite the need to improvise a little with the ingredients. The twist is that this time (a) I made it (under supervision of course 🙂 !) and (b) we used the “disco” (Cowboy Wok). Oh yeah…
KFC Chicken – Disco Style
There are a few resources online nowadays that claim to have discovered (through a friend of a colleague of “a guy who knew how to get in the safe” etc) the secret of Colonel Sanders’ famous “eleven herbs and spices” recipe for KFC chicken. Here’s one… deep fried on my new “cowboy wok” !
“Trompo King” Upright Skewer
“Trompo” is Spanish for “spinning top” apparently. The reference to spinning could be because this provides a nice way to “vertically stack” meats as an alternative to a rotisserie. Or maybe it spins on the skewer when you turn it upside down ?

11th May 2012…a life changing moment ? Not quite, but close. Not as important as the birth of my kids or meeting my wife, well maybe. This was the day I came face to face with Kamado Joe for the first time.
