Queso is Spanish for cheese. This dish is really easy, very forgiving, and exceptionally tasty if you’re a cheese fan. If you can clean out the fridge and melt cheese, then you can make queso. Baked potatoes are optional.
Brit(-ish) Bacon
…well, technically “Canadian Bacon” as far as the cut of meat is concerned, but the end result looks, tastes, sounds and smells exceedingly British. A hit with the family and really easy to do. The biggest challenge really is in the slicing !
Bourbon Cherry Glazed Pork
Costco. Fantastic place for meat but you need to go with an open mind. You might come away with a beef bargain, or chicken or even lamb. On our last trip it was pork…a HUGE loin for a low, low price which I cut into three. One’s destined to become Canadian (almost British) bacon, but this one was going on the rotisserie…
Giordano’s Take Away for the UK
Well, here it is. THE Giordano’s Pizza and if I say so myself, this was awesome. We love Giordano’s, and the thought of going back to the UK without being able to get hold of one of their pizzas is distressing, to say the least. Armed with this recipe we can relax !
Crumpets from Home at Home
Crumpets are a quirk of UK (specifically Welsh !) cuisine and have often been a breakfast or tea-time treat back home. We occasionally find them in the US stores, but during the 2020 quarantine lockdown, one of the major purveyors of crumpets, Warburtons, published the recipe.
Kamado Tamales
Cinco de Mayo came and went with less fanfare in 2020 due to a “Shelter in Place” order (stay at home !). Irrespective of quarantine, and aside from Margeritas and tequila in general, order of the day would seem to include Tamales. Here’s our first encounter with this Mexican street food.
KFC Chicken – Disco Style
There are a few resources online nowadays that claim to have discovered (through a friend of a colleague of “a guy who knew how to get in the safe” etc) the secret of Colonel Sanders’ famous “eleven herbs and spices” recipe for KFC chicken. Here’s one… deep fried on my new “cowboy wok” !
“Trompoori Jarbecue” Chicken
… or “Trompo Tandoori made from a Jar and Barbecued” Chicken. This is a first spin of the Trompo King “Vertical Skewer” to make a kind of tandoori chicken. Hardly a “recipe” more of a test drive…but sometimes the quick and easy way is the right way to go.
“Trompo King” Upright Skewer
“Trompo” is Spanish for “spinning top” apparently. The reference to spinning could be because this provides a nice way to “vertically stack” meats as an alternative to a rotisserie. Or maybe it spins on the skewer when you turn it upside down ?
Motown Pizza
As I’ve discovered, especially since living in the USA, there’s more to pizza choices than just “thin crust or deep pan”. Detroit style is one of our favourites, and has a distinct texture and flavour….but needs love and attention (and the right cheese !) to make properly.
